Mint is a perennial herb in the Labitae family.

There are over 30 species of mint, the two most popular and widely available being peppermint and spearmint.

Choose bright green mint leaves with no signs of wilting. Store fresh mint wiht the leaves loosely wrapped and the stems in a glass of water for up to one week. Dried mint can be kept in an airtight container, in a cool dry place for up to 6 months.
