Agave nectar is an all-natural, low calorie, low glycemic sweetener.
It is derived from the blue agave plant which is also used to make tequilla. This golden syrup is composed of fructose (92%) and glucose (85%) sugars. Because fructose is 75% sweeter to the human brain than granulated sugar, less is needed to achieve the same level of sweetness.
Agave nectar can be used for baking, cooking and sweetening beverages. It has only 41 calories, 10g of carbohydrates and 2 grams of sugar per tablespoon.
